Sweet Potato Balls

Sweet Potato Balls are a nice twist on a favorite Thanksgiving dish.
INGREDIENTS:
3 pounds of sweet potatoes (cooked)
2 tablespoons butter
1/4 teaspoon salt
1/2 teaspoon pumpkin pie spice
1 egg
miniature marshmallows
3/4 cup gingersnap cookie crumbs
PREPARATION:
Mash potatoes while they are still warm, add butter salt and pumpkin pie spice. Add egg until combined. Chill until firm; roll them into balls (about golf ball size). Place 2 marshmallows in each one then and form again into a ball. Then roll them in the crumbs. Bake in a 400 degree oven on a lightly greased cookie sheet for 10 to 15 minutes. - Melissa

Baked Apple and Sweet Potato Casserole

INGREDIENTS:
6 sweet potatoes
3 apples
2 tablespoons melted butter-divided
1/2 cup orange juice
1/4 cup brown sugar
1/8 teaspoon cinnamon
1/8 teaspoon allspice
1/4 cup rum
marshmallows
PREPARATION:
Preheat to 350. Boil or steam potatoes until tender, remove skin, cut lengthwise in slices. Peel and core apples slice in rings. Butter 9x6 dish, grease with 1 tablespoon butter, alternate potato-apple layers.
Add remaining ingredients with the rest of butter and pour over top. Bake 30 min. or more until liquid is mostly absorbed and top is brown and shiny. Top with marshmallows a little before done and brown. - Stephanie

1.Pecan Pumpkin Pie:Ingredients:
3 eggs, 1 cup solid pack pumpkin, 1/3 cup sugar, 1 teaspoon pumpkin pie spice, 2/3 cup corn syrup, ½ cup sugar, 3 tablespoons melted butter, ½ teaspoon vanilla, 1 cup pecan halves, 1 unbaked 9-inch pastry shell.
Method:
Stir together 1 slightly beaten egg, pumpkin, 1/3 cup sugar, and pie spice. Spread over bottom of pie shell. Combine 2 beaten eggs, corn syrup, ½ cup sugar, butter and vanilla. Stir in nuts. Spoon over pumpkin mixture. Bake in moderate oven (350 degrees) 50 minutes or until filling is set.

2.Sweet Potato Pudding: Ingredients:
2 ½ pounds sweet potatoes(boiled, drained and peeled), 6 tablespoons unsalted butter or margarine(at room temperature), 2 large eggs, ¼ cup heavy cream, 1 tablespoon brandy(optional), ½ teaspoon freshly grated lemon peel, ¼ teaspoon each salt and pepper.
Method:
Heat oven to 375 degrees. Grease a shallow 1 ½ quart baking dish. Break up potatoes and puree in a food processor or mash by hand with 5 tablespoons of the butter. Add eggs and remaining ingredients except 1 tablespoon butter; mix until well-blended. Spread evenly in baking dish; dot with remaining butter. Bake uncovered 30 to 35 minutes until top is lightly browned and puffed.

3.Thanksgiving Cranberry Relish:Ingredients:
4 c. cranberries, 2 oranges 1 1/2 c. sugar.
Method
Wash cranberries and oranges. Cut oranges into quarters and core. Put cranberries and oranges through a food processor or blender. Add sugar and mix well. This is best if made at least 2 days before Thanksgiving.

4.Easy Pumpkin Cake :Ingredients:
1 1/4 cups sliced almonds, 3 eggs, 1 16-ounce can pumpkin (not pumpkin pie filling), 1 tablespoon pumpkin pie spice, 1/2 cup vegetable oil, 1 package yellow cake mix (1 pound, 2 1/4 ounces), 1 teaspoon grated orange peel, Orange glaze (see below) .
Method
Heat oven to 350 degrees. Spread almonds in single layer in shallow pan. Place in cold oven; toast at 350 degrees for 9-11 minutes, stirring occasionally, until lightly toasted. Cool. Butter Bundt pan, then coat with 1/2 cup almonds. In electric mixer, beat together eggs, pumpkin, spice and oil. Blend in cake mix. Beat on medium speed for 2 minutes. Stir in orange peel and remaining 3/4 cup almonds. Pour into prepared pan. Bake in preheated oven 45-55 minutes, until pick inserted in center comes out clean. Cool. Invert onto serving plate and drizzle with orange glaze.Makes 10-12 servings.

5.Thanksgiving Muffins:Ingredients:
1 cup cooked pumpkin or canned, 1/2 cup sugar, 1/2 cup margarine, 1 egg, beaten, 1 tablespoon molasses, 2 cups sifted flour(sift before measuring), 1/4 teaspoon cloves, 1/4 teaspoon nutmeg, 1/4 teaspoon cinnamon, 1/4 teaspoon mace, 1 teaspoon baking powder, 1 teaspoon salt, 1 teaspoon soda, 3/4 cup buttermilk, 1/2 cup chopped pecans, 1/2 cup raisins .
Method
Blend together sugar and margarine. Add pumpkin, molasses and egg. Sift flour with baking powder and spices. Add soda to buttermilk. Mix raisins and nuts with 1/2 cup of sifted flour and spices. Add the rest of flour alternately with buttermilk to creamed mixture. Add raisins and nuts. Place in well greased muffin tins. Bake at 375° for 20 minutes. If very large tin, bake 25 minutes. Makes 4 dozen small or 2 dozen large muffins.

Baked Whole Ham With Pineapple Glaze
1 whole ham with bone in
Select ham with the bone in according to the number of guests allowing 1/3 pound of ham per guest. Wash the ham and place in a shallow roasting pan with the fat side up 10 to 15 pound ham insert a meat thermometer so that the tip is in the center of the thickest part of the ham but does not touch the bone or the drippings. Do not cover bake in oven at 325/o. until the thermometer reaches 140/o The last 30 minutes take the ham out of oven and remove any skin from top. Score top of ham lightly, cutting uniform diamond shapes. Place a whole cloves in each diamond. ( Also I put a whole pineapple ring every so often with a whole maraschino cherry in center of pineapple held on with a tooth pick through the cherry). Then cover with the pineapple glaze below. Return to the oven for another 30 minutes

Pineapple Glaze 1 cup dark brown sugar, packed
1 tablespoon cornstarch
1/4 teaspoon salt
1 can (8 1/2 ounces) crushed pineapple, with syrup
2 teaspoons lemon juice
1 teaspoon prepared mustard
In a small sauce pan, place the brown sugar, cornstarch, salt. Then stir in the pineapple, lemon juice, and mustard. Cook over medium heat. stirring constantly. until mixture thickens and boils. Boil and stir for 1 minute. Pour over undrained ham. Baste 2 time while finishing the baking process. Remove and place on a platter to server. This is very good eating and attractive in appearance.

THANKSGIVING HAM SLICES
1-1/2 c. mashed, cooked sweet potatoes
1/2 c. applesauce
1/4 tsp. cinnamon
2 center-cut ham slices, 1/2 inch thick
1/4 c. bottled lemon juice
1/2 c. brown sugar
Combine potatoes, applesauce and cinnamon. Spoon over 1 ham slices. Place remaining slice over potato mixture. Bake at 325 degrees for 1 hour. Combine lemon juice, sugar and 2 tablespoons pan drippings. Baste ham well. Bake for 15 minutes. Slice to serve. Yield: 4-6 servings.
